Salmon Cakes

Serves 4-5 Salmon Cakes

Ingredients

  • 1/2 Pound
    Wild Caught Salmon, diced OR 1-2 Cans Wild Caught Salmon
  • Green Onion, finely chopped
  • 1 Tablespoon
    Cilantro, finely chopped
  • 1 Tablespoon
    Red Pepper, finely chopped
  • 1 Teaspoon
    Garlic Powder
  • 2-3 Tablespoons
    Organic Unrefined Coconut Oil
  • 1/3 Cup
    Almond Flour + 1/4 C for dredging
  • Lemon, juiced
  • Egg

Instructions

  1. In a large skillet, place the coconut oil into the pan and bring up to heat slowly. *About 400 degrees*

  2. Combine all ingredients into a bowl and mix together.
    **OPTION: you can leave out the almond flour and only use to coat the patties. See video!**

  3. Separate salmon mixture out into 4-5 equal sized balls.

  4. One at a time, roll the salmon ball into the almond flour, pressing firmly to form into a patty; be sure the Salmon patty is coated on both sides with almond flour!

  5. Place each salmon patty into the hot pan and pan fry on each side for 3-4 minutes or until golden brown!

  6. Enjoy with Dr. Russ' Super Slaw!
