Chicken Salad

Serves 4

Ingredients

  • 3-4 cups chopped cooked chicken
  • 1 cup diced celery
  • 2 Tbs. chopped green onions
  • 1 Tbs. lemon juice
  • 2/3 cup Vegenaise with grape seed oil
  • ΒΌ cup walnuts or pecans, chopped
  • Salt and pepper

Instructions

  1. Mix all ingredients until combined and chill.

    Serve on lettuce or spinach leaves.

    To serve as a casserole, put in a lightly greased casserole, top with organic or raw parmesan cheese and bake for 20 minutes at 350 degrees.
