Chicken Salad with Nuts

Ingredients

  • 3-4 cups
    chopped cooked chicken
  • 1 cup
    diced celery
  • 2 tbsp
    chopped green onions
  • 1 tbsp.
    lemon juice
  • 2/3 cup
    Vegenaise
  • 1/4 cup
    walnuts or pecans (chopped)
  • salt and pepper
    to taste

Instructions

  1. Mix all ingredients until combined and chill.

    Serve on lettuce or spinach leaves.

    To serve as a casserole, put in a lightly greased casserole, top with organic or raw parmesan cheese and bake for 20 minutes at 350 degrees. (Serves 4)
