Coconut Curry Chicken

This is a recipe the whole family will love. Only takes 30 minutes to prep, cook and enjoy!


Ingredients

  • 2 lbs boneless skinless chicken breast
  • 1 can coconut milk
  • 2 cups broccoli
  • 1 cup mushrooms
  • 1 onion
  • 1 Tbs. curry powder
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • Salt to taste

Instructions

  1. In a large skillet, add coconut milk, chicken, broccoli, mushrooms and chopped onion.

    Cook on medium high 15 minutes.

    Add curry powder, garlic, ginger and salt cook over medium low heat for 15 minutes.

    Garnish with fresh parsley and enjoy!
