Unicorn Banana Chocolate Muffins

These muffins are simply DELICIOUS! My niece has named them Unicorn Muffins because when she tried them for the first time she was amazed at how delicious they were, so obviously a Unicorn made them…seriously they are THAT GOOD. To all my ADVANCED PLAN people, these contain bananas, which are CORE PLAN only. Once you are done with you detoxing, these muffins will be perfect for you to have around to help sustain all the amazing progress you have made!

Ingredients

  • 3-4
    Ripe Bananas, mashed
  • 3
    eggs
  • 3 Tablespoons
    Organic Unrefined Coconut Oil, melted
  • 1 Teaspoon
    Organic Vanilla
  • 1/3 Cup
    Nut Butter of your choice
  • 1/3 Cup
    Coconut flour
  • 3/4 Teaspoons
    Baking Soda
  • 3/4 Teaspoons
    Baking Powder, aluminum free
  • 1/4 Teaspoon
    Salt
  • 1 Cup
    Lily's Dark Chocolate Chips
  • 12 Tablespoons
    additional nut butter

Instructions

  1. Preheat the oven to 350, and get your muffin pan out.

  2. Line the muffin pan with silicone muffin liners or unbleached paper liners.

  3. In a large bowl or mixer combine mashed bananas, eggs, melted coconut oil, vanilla, and 1/3 cup of nut butter until mixed thoroughly.

  4. Add coconut flour, baking soda, baking powder, and salt to the wet ingredients and combine completely.

  5. Fold in chocolate chips by hand.

  6. Place about 1 tablespoon of the muffin batter into the the bottom of each muffin pan.

  7. Then place about 1 teaspoon of desired nut butter onto the batter in each muffin tin.

  8. Cover each muffin tin with the remaining amounts of batter!

  9. Sprinkle a few more chocolate chips on top if you want and place in a 350 degree oven for 20 minutes or until toothpick comes out clean.

  10. Let cool for about 10-15 minutes before eating!
