Vegetable Beef Soup

Ingredients

  • 1 Pound
    Grass-Fed Ground Beef
  • 2- 32 Ounces
    Containers of Organic Vegetable or Chicken Broth
  • 2 Tablespoons
    Organic Butter
  • Stalks Celery, chopped
  • Large Onion, chopped
  • 1/2-1 Teaspoon
    Italian Seasoning
  • 1/4-1/2 Teaspoon
    Black Pepper
  • Sea Salt to taste (about 2 Teaspoons)
  • Tomatoes (blanched and peeled OR a can of organic crushed tomatoes)
  • Kale or Spinach to desired amount

Instructions

  1. Melt butter in a stockpot and add celery, onions, and ground beef.

  2. When beef is browned, add the vegetable broth, Italian seasoning, black pepper, sea salt, and tomatoes.

  3. Let cook for about 10-15 minutes.

  4. Add spinach at the end if you want!
