Veggie Strata

December 31, 2016

The cook’s definition for a Strata is a bread pudding-like layered comfort food casserole made with eggs, cheese and stale cubed bread (or sometimes hash browns). This is the Maximized Living Nutrition Plans version of a strata, since regular cubed bread and/or hash browns were out.
You can substitute Ezekiel bread which would be acceptable on the Core Plan and leave bread out for the Advanced Plan (it will turn out more like a crustless quiche and still delicious!).

Black beans are great because they are high in protein and fiber and contain a healthy dose of magnesium, potassium and folate. Here’s a great recipe for meatballs with black beans.

Although black beans must be eaten in moderation for the Advanced Plan, these are a nice change of pace. These are perfectly acceptable for the Core Plan.

Apple cider vinegar (ACV) is a nutrient powerhouse. From heartburn relief to skin benefits to digestive aid, ACV has countless advantages worth looking into! Sip this drink steaming in the morning or before bed. It might taste a bit strong, so sweeten with stevia or raw honey as you like. It will boost your metabolism, clear your skin, alkalize the body, and release impurities. Now that’s a beneficial beverage!
