Veggie Strata

December 31, 2016

The cook’s definition for a Strata is a bread pudding-like layered comfort food casserole made with eggs, cheese and stale cubed bread (or sometimes hash browns). This is the Maximized Living Nutrition Plans version of a strata, since regular cubed bread and/or hash browns were out.
You can substitute Ezekiel bread which would be acceptable on the Core Plan and leave bread out for the Advanced Plan (it will turn out more like a crustless quiche and still delicious!).

Here’s another version of an All-American favorite! Typically these are fried in damaged oils (bad fats), loaded with refined flours, additives, and of course conventionally raised chicken. This recipe actually has organic chicken, good fats, extra nutrients in the breading and nothing artificial!

This is better than restaurant Thai food, because not only do you control the ingredients, but it takes about 30 minutes from start to finish to prepare. So, no excuses that you cannot prepare a delicious healthy meal in a hurry. This meal is acceptable on the advanced plan and makes wonderful leftovers.

Black beans are great because they are high in protein and fiber and contain a healthy dose of magnesium, potassium and folate. Here’s a great recipe for meatballs with black beans.

Although black beans must be eaten in moderation for the Advanced Plan, these are a nice change of pace. These are perfectly acceptable for the Core Plan.
